Basic Butchering of Livestock and Game by John J Mettler Jr (a retired large-animal veterinarian) is a excellent read for anyone interesting in butchering domestic and/or game meats. The book is geared towards the novice to moderately experienced butcher and includes well over 100 illustrations. As butchering your own meat is both gratifying work and allows for a more intimate understanding of food, we encourage anyone, be it a hunter, Paleo enthusiasts, locavore, BBQ aficionado, or anyone else interested in food and meat, etc to learn more about butchering. This book is a great introduction.
